Pour a glass of warm boiled water into a bowl. We dissolve sugar and dry yeast in it, pour 3 tablespoons of flour and stir well so that the mixture turns out homogeneous, without lumps and clots. Cover the container with a towel and leave it in a warm place for 15 minutes. A "cloud" of foam should form on the surface of the mixture. This is a sign that the sourdough is ready.
Drive in the egg, mix. Add salt and flour residues, mix thoroughly. Pour in sunflower oil and knead the elastic dough. We put the bowl with the dough in a warm place for 2 hours, covered with a towel. During this time, it should increase in volume by 2-3 times. The dough is ready, you can proceed to filling and frying pies.
