Step 1:
Prepare the ingredients according to the list. In the harvest season, when cherries are cheap, this drink turns out not only tasty and healthy, but also budget-friendly. There are different recipes for cherry compote for winter. The simplest and most pleasant to the taste is a compote of cherries with pits.
Step 2:
Cherries for compote preparation can be used of any variety. The main thing is that the berries are well ripe and sweet, but not overripe and burst, otherwise the drink may start to ferment. We wash the cherries, sort them out, remove the damaged, crumpled and rotten berries, twigs, leaves. The cherries are thoroughly washed and thrown into a colander so that the water is completely drained.
Step 3:
Put the cherries in pre-prepared (washed and sterilized jars). The jars should be filled with cherries for about a third of the entire capacity. In a teapot, boil water and pour boiling water over the cherries in jars up to the neck. Hot water should be poured into the jars in a thin trickle and try to get into the center so that the glass does not burst from sudden heating. We cover the jars with sterile lids and leave them for 15 minutes.
Step 4:
Put sugar and citric acid in an enameled saucepan. Citric acid can not be added, but it gives the drink a particularly pleasant taste, makes the color and aroma of the compote brighter.
Step 5:
Drain the water from the jars of cherries into a saucepan, put it on fire. Bring the syrup to a boil, stirring with a spoon so that the sugar completely dissolves.
Step 6:
Pour boiling syrup over the cherries in jars, immediately roll up the jars with lids. Turn upside down, wrap with a warm towel and leave at room temperature until completely cooled. After that, we remove the compote for storage in a cool place. Enjoy your meal!
