Step-by-step cooking
Step 1:
How to make cherry and currant compote for winter? Prepare the necessary ingredients for this. Currants can be used both black and red. Or you can take both. For my taste, black is more fragrant, so I will use it. Cherry and currant berries are sorted from twigs and leaves and rinse well from dirt. There is no need to remove the cherry stones.
Step 2:
I make compote for two liter cans. Wash the compote jars well and sterilize them in any way convenient for you. This can be done in the microwave, in the oven, or over hot steam. Boil the lids for a minute in boiling water.
Step 3:
Pour water into a saucepan and put it on fire. Bring to a boil. Then add sugar. If the berries are sour, then you can add more sugar.
Step 4:
Put the washed cherries and currants into the boiling syrup. Bring everything back to a boil. Boil for a couple of minutes and pour the boiling compote into sterile jars. Close with prepared sterile lids. By the way, the number and proportions of berries can be changed to your liking. You can take a lot more berries so that they fill the whole jar. But water, in this case, will need a little less.
Step 5:
Cherry and currant compote is ready! Turn the jars over, wrap them in a blanket and leave them to cool completely. Then the compote can be stored in a cool place, for example, in the basement or in the cellar. Have a nice treat!

Instead of sugar, you can use a sweetener that is not afraid of heat treatment.
For cooking, it is better to use filtered or bottled water that is neutral to taste. If you use tap water, keep in mind that it can give the dish an unpleasant characteristic taste.
