When preparing homemade tincture on plum, it all depends on which fruits will fall into this difficult drink with character. The plums themselves should be ripe and fragrant. Only then will the tincture turn out to be truly fruity, pleasant to the taste and smell.
So, first of all, the plums need to be sorted out: the damaged ones should be removed, the dirty ones should be washed under running water. Then put the plums in a colander to drain excess water from them.
Prepare the container for the tincture. Rinse it with a good detergent and pour boiling water over it.
Place the washed plums in a tincture container and pour moonshine so that it completely covers the fruit fruits. Moonshine is best used neutral, without a pronounced odor, with a strength of about 50-55 degrees.
Put a container with plums and vodka in a cool dark dough. There the mixture should be infused for a month or more.
After the alcoholic-fruit mixture has been infused, it must be filtered. To do this, you can use sterile cotton wool or a bandage folded in several layers.
Remove the strained liquid to a dark place. Fill the remaining plums with granulated sugar and shake the container well so that the sugar dissolves faster. Leave the container with fruit pulp and sugar for another week or two in a warm place to form the so-called sugar syrup. Then strain the resulting syrup again in a similar way, separating the pulp and sweet liquid.
In the previously drained and filtered tincture, add sugar syrup from under the plum to your liking. The syrup will soften the taste of homemade tincture and give it an even more fruity aroma. Thus, the alcoholic note will leave the drink.
By adjusting the amount of sugar syrup in homemade tincture, you can prepare a drink with varying degrees of strength and sweetness. So, by adding more syrup, you can make a wonderful plum liqueur.
