Cooking method
1. We put the grapes in a bowl, pour cold water, leave for 15 minutes (this is necessary so that the upper fungal layer from the berries is well washed off, which helps fermentation, and we do not need it in compote). Then we sort through the berries, separating the spoiled and rotten ones, remove the berries from the twigs.
2. We wash the jars, sterilize them, fill them with grapes by one third.
3. Pour water into a saucepan, put it on fire, bring it to a boil. Cool boiling water is carefully poured into jars with grapes, covered with tin lids, let stand for about 15-20 minutes.
4. Drain the water from the cans into a saucepan, add sugar and citric acid, mix. We send the pan to the fire and bring the syrup to a boil, when the sugar is completely dissolved, boil for another 5 minutes.
5. Pour the grapes in jars with hot syrup and screw them with iron lids. We turn the cans upside down, insulate them with a blanket and leave them to cool completely.
We transfer the blanks to storage in the basement (cellar, pantry).
