Baked Mashed Potato Patties

- It's ideal if you have mashed potatoes left over from last night's dinner — that saves you time on the patties. But you can also make it fresh.
- So, peel and wash the potatoes and boil them until done. Add salt once the water comes to a boil. Drain the potatoes, reserving a small amount of the cooking water in a cup to use for the mash. While the potatoes are still hot, mash them into a purée. Start with completely dry potatoes and gradually add the liquid — that way the mash comes out soft and lump-free. While the mashed potatoes cool to a comfortable temperature, prepare the onion. Peel, wash, and finely dice it, then fry it in hot vegetable oil until soft and golden. Once the onion is done, add it to the slightly cooled mashed potatoes. Add the egg, salt, ground pepper, and garlic (pressed or finely chopped). Work the mixture with a fork until smooth. You'll get a fairly firm potato dough that's easy to shape into patties. Pour the breadcrumbs onto a wide plate. Moisten your hands with water or a little vegetable oil. Shape patties in any size and shape you like — oblong, round, flat. For this cooking method, the shape doesn't really matter. Coat the patties well in breadcrumbs and place them in a baking dish that you've first greased with a little vegetable oil. Bake the patties in an oven preheated to 375°F (190°C) for 25 minutes. If your oven has a convection setting, you can use it for a crispier, more golden crust. Serve the patties hot as a dish on their own or as a side. They pair wonderfully with any hot meat or fish dish and can be rounded out with vegetables or sauces of your choice. Enjoy!
