The pie turns out delicious, and cooking it is quite simple! So, we start with yeast. To make a pie according to this recipe, you will need fresh yeast. Crumble them into a deep bowl, pour granulated sugar to them, mix lightly and put them in a warm place for 15-20 minutes. Melt butter in a bowl, for example, in the microwave, but you can also just on the stove. Then let it cool down.

Closer to the end of the specified time, we heat the milk to 35-40 degrees (no more) and pour the milk into the yeast. In the same place, we break two previously well-washed and towel-dried chicken eggs. Pour salt, baking powder and vanilla sugar. Add the melted and cooled butter to the mixture, mix everything thoroughly.

Sift wheat flour into a separate bowl and start adding it in portions to the rest of the ingredients, kneading the dough. Knead the dough until smooth and homogeneous. The dough turns out to be quite soft, not at all steep, pleasant to the touch. We form a ball from the dough, put it on the bottom of a large deep saucepan, cover it with a clean dry towel and put everything in a warm place. Let the dough come up within 30-40 minutes.

When the dough has doubled in volume, knead it again and form a ball again and put it in a warm place under a towel. Again we wait for 30-40 minutes, during which the dough again increases in volume, becomes very airy, and then we move on to the pie itself.

We wash the poppy seeds, put them in a saucepan. Pour boiling water so that it is completely covered with it. Put on a small fire and bring to a boil, then boil for 2-3 minutes. We throw the poppy on a strainer, and when the water is completely drained, we return it back to the saucepan. Add sugar (20 g) and rub the poppy with a pestle.

We knead the dough, spread it on the work surface, dusted with a small amount of flour and divide it in half. First, we work with the first half, rolling it into a thin layer (no more than 0.5 cm thick). Lubricate the layer with vegetable oil, spread half of the prepared poppy seeds, distribute it evenly over the dough. Sprinkle half of the granulated sugar on top. Now we roll up the layer into a roll, and then cut it into identical pieces with a thickness of about 2.5 cm. On each piece, we connect the ends of the dough from below, forming a kind of "bud".

The baking dish (and they may need 2 or 3 depending on the size) is lined with parchment and spread the buds. Close together, but not too tight.

Now we do the same with the remaining dough, after turning on the oven to warm up to 200 degrees Celsius.

In the cups, beat the egg with a fork and lubricate their buds on top. We put the molds with the pie (pies) in the preheated oven for 20-25 minutes. The time depends on the type of oven - the pie should become ruddy.

You can serve the pie both warm and cold!
