Spaghetti with Canned Stewed Meat

  • First, make the sauce for the spaghetti. Peel the onion, rinse and dry it, and cut it into small dice. Wash and dry the tomatoes, then score a small X in the skin of each. Pour boiling water over them for half a minute, then drain; grab an edge of the skin and peel off the tough outer layer. Chop the tomato flesh however you like — through a meat grinder, in a blender, or just finely diced. Set a deep skillet over the heat, add a little olive oil, and toss in the chopped onion. Sauté over medium heat, stirring constantly, until translucent, 3–4 minutes. Add the canned stewed meat and stir well, frying everything together a couple more minutes. Add the chopped tomatoes and stir again. Season with freshly ground black pepper and the Italian herb blend, and stir. Bring to a boil over medium heat, then cover, lower the heat to a minimum, and simmer for half an hour. Meanwhile, cook the spaghetti: bring a pot of water to a boil, salt it to taste, and add the spaghetti. Cook to al dente, following the package timing. Drain, return the spaghetti to the pot, add the butter, and toss. Toward the end of cooking the tomato sauce, taste it and add salt, then take it off the heat and let it rest 5–7 minutes. To serve, plate the spaghetti first, then top with the tomato-and-meat sauce. Finish with chopped fresh herbs and grated Parmesan. Enjoy!
