    How do you make ginger jam with lemon? Gather everything you need. Choose large pieces of ginger, which are easier to peel.

    Peel the ginger root and cut it into small pieces.

    Put the chopped ginger in the pot you'll cook the jam in and cover it with the sugar. I use an enameled pot.

    Add the water, stir, and set the pot over the heat. Bring to a boil, stirring now and then, and simmer for 7–10 minutes over low heat.

    As it cooks, the ginger shrinks a little, the syrup thickens, and the jam turns a golden color.

    Grate the zest from the lemon and add it to the pot with the ginger. Stir and bring it back to a boil. Cook to the syrup thickness you prefer — the longer it simmers, the thicker it gets. Once the jam has cooled, you can add lemon juice or small pieces of lemon flesh for extra tartness and vitamin C (you may need a bit more sugar then). You can also add cinnamon or mint to taste.

    The finished jam is a lovely golden color and very fragrant. Ladle it into clean jars and let it cool. Store it in a cool place. This unusual jam is great stirred into baked goods or hot drinks, and a wonderful immune boost in winter. Enjoy!
