- First, turn the oven on to 350°F (180°C). Then prep the vegetables. Wash the potatoes and carrots well and pat them dry with a paper towel; peel the onion. Cut the potatoes into medium pieces (about 6 per potato). Pour clean water into a pot, lightly salt it, and bring to a boil. Drop in the potatoes and boil for 10 minutes from the time the water returns to a boil, until half-cooked. Drain and set aside. Meanwhile, finely dice the onion and coarsely grate the carrot. Rinse the mushrooms well under running water, drain them in a colander, and slice them. Fresh mushrooms are best (more flavorful), but canned ones work too. Heat olive oil in a skillet and add the onion and carrot, cooking until translucent. Add the sliced mushrooms, season with salt and pepper (or any seasoning you like), and sauté until soft. Stir in the sour cream, mix well, and bring almost to a boil, then take the pan off the heat. Grease a baking dish with a little butter and spread all the parboiled potatoes over the bottom. Spread the mushroom-and-vegetable sour cream mixture evenly on top. Bake for 10–15 minutes, until a nice golden crust forms. Serve the baked potatoes with mushrooms hot, as a side for roasted meat or fish, or as a dish on its own. Enjoy!
