Pour the milk into an enameled saucepan. Put on medium heat and bring to a boil. Turn off the heat and add lemon juice. Hot milk will immediately start to curdle. Put gauze in a colander and pour the contents of the pan. Mix the cottage cheese with a spoon to make the whey glass faster. Then hang the cottage cheese in cheesecloth and leave for 30-50 minutes. The longer the cottage cheese hangs, the drier it will be.
