Halushky with Meat (Ukrainian Dumplings)
A Ukrainian-inspired dinner — hearty and delicious! Halushky with meat make a great dinner or even lunch; serve them with sour cream or any sauce you like. The dish is quite simple to make, and the big plus of halushky is that they're almost impossible to overcook. For this recipe, it's best to use boneless pork — just the lean meat.

- Rinse the pork, pat it dry, and cut it into small pieces. Peel the onion and dice it.
- Put the pork and onion in a deep, heavy-bottomed skillet, add the vegetable oil, and fry over high heat for 3 to 4 minutes, stirring.
- Pour in enough boiling water to cover the meat completely, season with salt, and simmer over medium heat until tender, about half an hour.
- While the pork simmers, make the dough for the halushky:
- warm the kefir until it's just warm, add the baking soda, and stir;
- crack the egg into the kefir, add salt, and sift in the flour;
- mix the dough with a spoon — it should be sticky but not runny.
- Pour water into a pot, set it over the heat, bring it to a boil, and salt it. Using a dessert spoon, drop the dough into the boiling water, using a second spoon to help scrape it off into the water. When the halushky float to the surface, they're done.
- Lift the halushky out with a slotted spoon and transfer them to the skillet with the meat.
- Peel the garlic, put it through a press, and add it to the skillet. Cover and simmer everything for 2 to 3 minutes, then take it off the heat and let it rest for 5 to 10 minutes.
- Serve garnished with fresh herbs and a sprinkle of mixed ground pepper!
