  • Most Chinese dishes call for all sorts of fairly exotic ingredients that can be hard to track down, but the soup I want to recommend needs none of those—it's made from everyday products. I really encourage you to try this wonderful dish from Chinese cuisine. Cut up the chicken breasts and season with salt and pepper. Score the carrots and slice them into rounds so they look like little flowers. Cut all the onion into strips. Sauté the onion, carrot, and chopped garlic in oil for about 2 minutes, then add the chicken and shredded cabbage and pour in as much chicken broth as you like (go by how thick or thin you prefer the soup). Simmer for about 15 minutes. Soak the mushrooms and noodles for 20–30 minutes, then cook them in the soup for 5 minutes. At the end, salt to taste and add a little sugar. I have 2 personal secrets: 1) use a really fragrant soy sauce; 2) never overcook the soup.
