Skillet Pasta with Sausage

You won't find a recipe simpler than this one! It's a hit with guys especially, since they want a meal that's filling but quick to make, with as few ingredients as possible.

  • Pour filtered water into a pot, set it on the stove, and bring it to a boil. Add a tablespoon of vegetable oil to the boiling water (this keeps the pasta from sticking together) along with some salt, then add the pasta. Any shape works — elbows, bow ties, or farfalle, for example — but be sure it's made from durum wheat. Cook the pasta until al dente, since it'll cook a bit more in the skillet later, then drain it in a colander. Take the bologna and peel off the casing. Cut it into evenly sized cubes — small cubes if you're using small pasta, larger cubes if the pasta shape is bigger. Peel the onion and cut it into small cubes. Set a skillet over the heat, add a little vegetable oil, and add the bologna cubes. Fry until lightly browned, then add the chopped onion and stir. Keep cooking for a few more minutes. As soon as the onion turns golden, add the cooked pasta to the skillet. Sprinkle in some seasonings and a little more salt if needed. Toss everything together well and cook for another 2–3 minutes, then turn off the heat and take the skillet off the stove. The skillet pasta with sausage is ready. Transfer it to a serving dish or plate it in portions and serve. If you like, sprinkle it with fresh herbs or finely grated cheese. You can also serve it with a sauce — cream or cheese, for instance. Note: the flavor of the dish will vary depending on which sausage you use.
