Mimosa Lavash Roll

An appetizer roll made with lavash and canned saury. Mimosa salad goes all the way back to the Soviet era, yet it's never gone out of style — it's easy to make from everyday ingredients, which keeps it budget-friendly. One way I like to serve it is as an appetizer roll using lavash flatbread.

    Gather the ingredients for this appetizer roll, which combines lavash with the main components of Mimosa salad. It's best to use lavash that comes in three sheets; if yours is a single large sheet, cut it into three equal pieces. Use a hard cheese. You can fold some cream cheese into the mayonnaise. Pick your herbs to taste — I use dill and parsley. Use medium eggs and canned saury (pink salmon or mackerel work too).

    Hard-boil the eggs, drain the hot water, cover them with cold water, and let them cool. Peel the cooled eggs and grate them on the coarse side of a grater. Lay a sheet of plastic wrap or foil on the counter and place the first sheet of lavash on it. Spread it with mayonnaise and distribute the grated eggs evenly over the top. From here you can either roll up each layer and add it to the next filled sheet, or simply lay down the next sheet of lavash and add its filling.

    Carefully open the can of saury, put the fish in a bowl, and mash it with a fork. Lay down the next sheet of lavash, spread it with mayonnaise, and distribute the mashed saury evenly over it.

    Rinse the fresh herbs, pat them dry, chop them, and sprinkle them over the fish.

    You can scatter some fresh herbs here too. Then roll up all the layers, wrap the roll in plastic wrap or foil, and chill it in the refrigerator for at least half an hour. Slice the finished lavash-and-saury roll and serve it as a cold appetizer.

  • Mimosa is a festive salad whose main ingredients are cheese, eggs, canned fish, onion, butter, and mayonnaise. It gets its name from its looks — the surface of the finished salad resembles spring mimosa blossoms scattered over snow.
