Step-by-step cooking
Step 1:
Prepare all the necessary products in advance and start cooking.
Step 2:
Pour water into a saucepan, pour the washed or soaked beans and cook until tender.
Step 3:
If you plan to prepare such a soup in advance, for faster cooking, soak the beans overnight in water so that it swells and becomes softer.
Step 4:
Under running water, rinse the dill or any other fresh herbs that you prefer. Finely chop with a knife.
Step 5:
Take red carrots, peel and grate on a coarse grater.
Step 6:
Rinse the mushrooms well and cut into not very small pieces. Any mushrooms will do. Even the forest ones. From the forest, the soup will be even more fragrant. I used oyster mushrooms.
Step 7:
Pour a small amount of vegetable oil into the pan, sufficient for frying onions, carrots and mushrooms. finely chopped onion and carrot grated on a coarse grater to fry for a transparent state. Add the mushrooms and fry all together over low heat for 4 minutes, stirring constantly.
Step 8:
Then add tomato paste to the pan with mushrooms (the paste can be diluted with hot water). Mix everything well and let it simmer for a couple of minutes.
Step 9:
Peel the potatoes and cut into pieces, as for a regular soup. Drop the potatoes and toasted mushrooms with vegetables into a saucepan with the finished beans. Add salt and pepper to taste, add herbs. Cook until the potatoes are fully cooked.
Step 10:
