Mushroom and Bean Soup

A tasty, fragrant first course. A very nourishing soup! A spoonful of sour cream is the perfect finishing touch.

Cooking method

    Gather all your ingredients ahead of time and let's get started.

    Pour water into a pot, add the rinsed or soaked beans, and cook until tender.

    If you're planning ahead, soak the beans in water overnight to speed things up — they'll swell and soften.

    Rinse the dill, or any other fresh herbs you prefer, under running water and chop them finely with a knife.

    Peel the carrot and grate it on the coarse side of a grater.

    Rinse the mushrooms well and cut them into not-too-small pieces. Any mushrooms work, even wild ones — wild mushrooms make the soup even more fragrant. I used oyster mushrooms.

    Pour a small amount of vegetable oil into a skillet, just enough to sauté the onion, carrot, and mushrooms. Sauté the finely chopped onion and grated carrot until translucent. Add the mushrooms and cook everything together over low heat for about 4 minutes, stirring constantly.

    Then add the tomato paste to the skillet with the mushrooms (you can thin the paste with a little hot water). Mix well and let it simmer for a couple of minutes.

    Peel the potatoes and cut them into pieces, as you would for any soup. Add the potatoes and the sautéed mushrooms and vegetables to the pot with the cooked beans. Season with salt and pepper to taste, and add the herbs. Cook until the potatoes are fully tender.
