Chicken Meatball Soup with Dumplings
A cozy, flavorful soup that kids and grown-ups both go for. My little one is absolutely crazy about soup with meatballs and dumplings, and my husband and I love a bowl of it too. It's hearty and satisfying, with tender chicken meatballs and pillowy little dumplings that fill you up and win everyone over.
Cooking method

Step 1:
Gather everything you'll need for the soup. Wash and peel the carrot, onion, and potatoes, and rinse the dill well.

Finely chop the onion.

Cut the carrot into thin strips.

Add the onion, carrot, and salt to a pot and cover with water. Set the pot over medium-high heat.

Finely chop the dill.

Step 6:
Beat the egg with a pinch of salt. Mine was a large egg.

Step 7:
Add about a third of the beaten egg and half of the chopped dill to the ground chicken.

Step 8:
Mix into a thick, well-combined meatball mixture.

Roll the mixture into small, round meatballs.

Step 10:
Dice the potatoes.

Once the soup comes to a boil, drop in the potatoes and meatballs. Cook until the potatoes are tender.

Meanwhile, make the dumpling batter. Stir together the flour and the rest of the beaten egg. The batter should be about the consistency of thick sour cream. If it's too stiff, stir in a splash of water to loosen it.

Start dropping the dumplings into the soup: scoop up about a third of a teaspoon of batter and use a second teaspoon to push it off into the simmering broth. Bring the soup back to a boil, cook for another 5 minutes, then take the pot off the heat.

Your chicken meatball soup with dumplings is ready. Ladle it into bowls and finish with a sprinkle of fresh dill.
