Chicken and Pineapple Salad
A wonderfully different salad for any gathering! I love making salads with fruit thrown in, and pineapple is a favorite. To my mind, pineapple lightens up a salad and makes it juicy, and its sweetness pairs beautifully with everything else.

Step 1:
Gather all the ingredients on the list. Simmer the chicken breast in lightly salted boiling water for 20–30 minutes, then let it cool. Boil the eggs for 5–7 minutes, drain the hot water, and cover them with cold water so they cool faster. Use a firm cheese that grates well. Open the can of pineapple and drain off the liquid.

Step 2:
Cut the cooled chicken into small cubes.

Step 3:
We'll build the salad in layers — either in one big bowl or as individual portions. Set a ring mold on the serving plate and lay the diced chicken in the bottom. Press it down gently with your hand or a spoon, then spread on a thin layer of mayonnaise.

Step 4:
Peel the hard-boiled eggs and grate them on the coarse side of a box grater.

Step 5:
Layer the grated eggs on next, then spread on another thin layer of mayonnaise.

Step 6:
Cut the canned pineapple into small cubes — even if it came pre-cut, dice it a little finer. Layer the pineapple over the grated eggs. Use just a touch of mayonnaise here, since the pineapple is already plenty juicy.

Step 7:
Grate the cheese on the fine side of the grater. (Tip: cheese grates more easily if you pop it in the freezer for a few minutes first.) Sprinkle the grated cheese over the top as the final layer.

Step 8:
Lift off the ring mold and chill the salad in the fridge for a bit before serving.

Step 9:
Just before serving, scatter a little chopped fresh herbs over the top. The salad comes out light, delicious, and satisfying. Enjoy!
