    How do you make avocado spread for sandwiches? Choose an avocado that's dark green and a little soft to the touch. If yours is firm and pale, leave it at room temperature for a few days — it'll ripen on its own. Peel a few cloves of garlic.

    Cut the avocado lengthwise all the way around and twist the halves apart to open it. Then remove the pit.

    Scoop out the soft flesh of the avocado with a teaspoon. Again, the avocado should be soft — otherwise it'll be hard to scoop out, and an underripe green fruit doesn't taste great either. Put the avocado flesh into a blender bowl.

    Add the garlic and olive oil to the avocado. Squeeze in the juice of half a lemon. Add a little salt to taste. The lemon juice is there not just for flavor but also to keep the avocado from browning.

    This spread pairs well with toasted bread. Fry pieces of a loaf or baguette over high heat with a little vegetable oil, or simply dry them in the oven. Let the toasts cool a bit. Spread a little of the purée on each piece and garnish with a sprig of fresh herbs.
