  • Fish soup—also known as ukha—is quite simple to make, yet it's delicious and very good for you. Pink salmon is an ideal fish for this soup. It belongs to the salmon family but is much more affordable than its relatives, so it's within everyone's reach. It's not very fatty, but it's tender all the same, and it makes a wonderfully fragrant, rich broth. So, to make fish soup from fresh pink salmon, here's what to do: 1. The main ingredient, of course, is the fish itself—fresh pink salmon. Choose carefully: pick fresh, good-quality fish. First, clean the salmon, rinse it well, and cut it into small serving pieces. If you're using the head for the soup, rinse it thoroughly and remove the gills. 2. Put the salmon pieces in a pot, cover with water, and bring to a boil. Once it boils, cook the salmon over low heat for another 15–20 minutes (this makes a richer, more flavorful broth). 3. Meanwhile, peel and wash some small potatoes, cut them into 3/4-inch (1.5–2 cm) cubes, and add them to the pot. 4. Then add finely chopped onion and one bay leaf. 5. With everything in the pot, cook the soup until the potatoes are tender (roughly 30–35 minutes). 6. Once the potatoes are done, stir in ground black pepper and salt to taste a few minutes before the end. 7. Serve, ladled into bowls and garnished with fresh herbs.
