  • Pour 3 quarts of water into a pot and bring it to a boil. While it heats up, rinse the apples and cut them into thin slices. It's best to leave the peel on, or the apple slices will fall apart as they cook. Drop the apple slices into the boiling water. Right away, add the rinsed cherries too (it's best to pit them). Cook the fruit over medium heat for 15 minutes — that's enough to make the compote, and the apples won't have time to fall apart. Just before taking the pot off the heat, add a little sugar and stir until it dissolves. Ladle into jars to seal up for winter.
