"Firebird" Salad with Honey Mushrooms and Chicken

    Set the Firebird on the salad and cut a crown from carrot. Make the bird's legs, eye, and beak from olive. Use dill for grass. You can let the salad sit to soak in, though it will already have soaked while you decorated.

  • You can use other ingredients to decorate the salad. Swap the olives for pitted prunes. Use finely chopped dill in place of the cucumber. Cut the Firebird's crown from red bell pepper. Replace the pomegranate seeds with diced red bell pepper or sweet corn. A simpler version: for an everyday meal, make the salad with easier decoration. Mix all the ingredients except the onion and mound them on a plate. Lay a sprig of dill or parsley on the mound for a "tail," top it with onion rings, and tuck pomegranate seeds inside the rings.
