"Firebird" Salad with Honey Mushrooms and Chicken
Your guests will be wowed by this delicious, eye-catchingly decorated salad! The "Firebird" salad is a worthy centerpiece for a holiday table — a tasty meat salad with pickled honey mushrooms. It comes together simply and quickly; the decorating takes a bit more time, since you'll be cutting out small details. But it's worth the effort — this salad won't get lost among the other dishes. Make it, and both you and everyone who tries it will be delighted.

Finely chop the pre-cooked chicken breast and toss it with the soy sauce. If you'd rather skip the soy sauce, just lightly moisten the chicken with some of the brine from the honey mushrooms.

Dice the boiled potatoes.

Grate the raw carrots on the coarse holes of a grater.

Rinse the pickled honey mushrooms with water.

If the honey mushrooms are small, you can leave them whole. Cut up any with long stems.

Cut the small onion into rings or half-rings. If it's sharp, pour boiling water over it and rinse with cold water.

Combine all the chopped ingredients with 2 tbsp of the mayonnaise.

Mix well and smooth the surface with a spoon.

Now spread the salad with the remaining mayonnaise and start decorating.

Slice the carrot thinly and cut it into strips.

Finely chop the fresh cucumber.

Lay out the Firebird's tail feathers with the carrot strips.

Carefully add the chopped cucumber with a teaspoon.

Slice the black olives into rings and use them to trim the ends of the feathers. Tuck pomegranate seeds into the olive holes, and edge the salad with a ring of pomegranate seeds.

Cut the Firebird's body out of a flat piece of cheese.

Set the Firebird on the salad and cut a crown from carrot. Make the bird's legs, eye, and beak from olive. Use dill for grass. You can let the salad sit to soak in, though it will already have soaked while you decorated.

- You can use other ingredients to decorate the salad. Swap the olives for pitted prunes. Use finely chopped dill in place of the cucumber. Cut the Firebird's crown from red bell pepper. Mix all the ingredients except the onion and mound them on a plate. Lay a sprig of dill or parsley on the mound for a "tail," top it with onion rings, and tuck pomegranate seeds inside the rings.
