Marinated Tomato Salad

A pretty, tasty dish for any meal! This marinated tomato salad is a delicious summer salad made from just a few ingredients. It takes a little time, but the result will please any food lover.

  • First you need to marinate the tomatoes. Since this takes some time, plan accordingly — if the salad is for a gathering, marinate the tomatoes the night before, or set aside a couple of hours beforehand. Tomatoes are the star here, so for a more striking look, use ones of different colors and sizes: big pink and yellow tomatoes, say, and bright red cherries. Rinse all the tomatoes under running water and pat them dry. Cut the large ones into quarters or a bit smaller; just halve the cherries. Next, make the marinade: in a small saucepan, combine water, red wine vinegar, the sugar, and your seasonings (salt, basil). Set it over low heat and bring to a boil, then let it cool. Put the rinsed tomatoes in a bowl. Peel the onion and garlic; press the garlic and slice the onion into half-rings, then add both to the tomatoes. Rinse and seed the chili pepper, cut it into wide strips, and add it too. Pour the cooled marinade over everything, cover, and let it sit for a couple of hours (or overnight in the fridge). Once the tomatoes are marinated, transfer them to a large salad bowl and tear the soft cheese into small pieces over the top. Season with salt and ground black pepper to taste. If you like, sprinkle with oregano or other spices and garnish with fresh herbs before serving. It's a beautiful, delicious dish! Enjoy!
