Layered Salad with Sautéed Mushrooms and Cheese

An insanely tasty salad with a surprising mix of ingredients. At first glance you might think mushrooms and pineapple don't belong together — but trust me, it's delicious. And the cheese ties it all together, pairing beautifully with both the pineapple and the sautéed mushrooms.

  • How do you make a layered salad with sautéed mushrooms and cheese? In our family this layered salad is called "Daisy," and it always has pride of place on our holiday table. It's our favorite, and it's also great for a vegetarian spread (we have two vegetarians in the family). So let's get started! First, the onion — it needs to be quick-pickled. Peel one onion and dice it. Pour a cup of boiling water over it, stir in 1 tablespoon of sugar and 2 tablespoons of 5% vinegar, and let it sit 15 minutes, then drain. While the onion marinates, do the mushrooms. Any kind works; I usually use button mushrooms. Rinse off any grit, halve each mushroom, and slice each half thin. Put the sliced mushrooms in a dry skillet over the heat. They'll release their water first; once it cooks off, add 2 tablespoons of vegetable oil and sauté them until golden. Hard-boil the eggs, peel them, and grate them on the coarse holes of a grater — set one egg aside for the garnish. Drain the canned pineapple and cut it into small pieces. Grate any hard cheese on the fine holes of a grater. Now assemble the salad, ideally in a ring mold (a springform cake pan works too), in layers: 1. grated egg, with a little mayonnaise; 2. sautéed mushrooms; 3. pickled onion, with more mayonnaise; 4. pineapple; 5. grated cheese, topped generously with mayonnaise. Decorate the top with the egg you set aside, made into a daisy: cut the white into strips for the petals, grate the yolk finely and spoon it into the center, and use parsley for the leaves. You can make several daisies for a whole little meadow. Enjoy!
  • It's worth making your own mayonnaise — it tastes better and is better for you. You can also use sour cream or plain yogurt as the dressing instead of, or mixed with, the mayonnaise in any ratio you like, which lightens up the dish.
