"Russian Beauty" Salad with Chicken

A tasty, juicy, beautiful salad — surprise the people you love! The "Beauty" salad, also called "Russian Beauty," makes a gorgeous centerpiece for a holiday table and won't disappoint on flavor. It has everything to please everyone — a meaty component and juicy vegetables! It's often built in layers, but that didn't seem worth the time to me, so I mixed the ingredients together right away. Better to save your energy for decorating the salad in the shape of a kokoshnik (a traditional Russian headdress) — it's not hard. Let's get cooking!

Cooking method

    Gather your ingredients. Boil the chicken breast and eggs in advance — I salt them while they cook.

    Finely chop the chicken breast and cut the ham into cubes.

    Halve one cucumber lengthwise and cut half of it into slices for garnish. Dice the rest.

    Dice the tomatoes and drain off the juice. Grate the hard cheese and eggs on the large holes of a grater.

    Finely chop the parsley, green onion, and red bell pepper. Set aside five sprigs of parsley for garnish.

    In a bowl, mix all the ingredients with the mayonnaise, except those set aside for the garnish — keep back the cheese, red pepper, cucumber, sliced olives, and some of the tomatoes. Taste the salad and add salt if needed (I didn't).

    Now shape the salad into a kokoshnik. Set a small bowl or saucer at the edge of a flat platter, outline the shape of the salad, and spread the salad out.

    Spread the grated cheese on top.

    Then add the red pepper mixed with tomatoes, leaving some aside as shown in the photo.

    Pipe waves of mayonnaise along the edges of the salad, dividing it into sections. Run waves along the sides too.

    Arrange the cucumber and olives.

    Tuck sprigs of parsley between the olive pattern. Spoon off any released juice and serve. The salad is ready! Enjoy!
