Let's start the preparation of Zodiac salad with the preparation of chicken meat. One chicken breast is boiled in advance in salted water. You can, if desired, add spices and bay leaf to the water during cooking. We leave the boiled chicken breast to cool completely directly in the water in which it was cooked. So the chicken meat will remain juicy.
The cooled chicken meat is cut into cubes or disassembled into fibers.
Mushrooms and champignons are thoroughly washed under running water, let the water drain. Cut each mushroom in half, then each half - plates. We begin to fry mushrooms in vegetable oil. First, the mushrooms release juice. When the juice has evaporated, add finely chopped onion to the mushrooms. Fry until golden brown. Thanks to such a simple trick, onions with mushrooms turn out to be fried and very tasty. If you start frying onions first, then they will be cooked in mushroom juice, and not fried.
At the end of frying, salt the mushrooms. We leave the mushrooms to cool.
Two small fresh cucumbers are washed and cut into cubes.
Cook the eggs, peel off the shell and also cut into a small cube.
Open a can of canned corn, drain the liquid.
In a deep salad bowl, mix all the prepared ingredients: 2/3 cans of corn, chicken meat, fresh cucumber, fried mushrooms with onions, boiled eggs. Salt and pepper to taste. Fill with a small amount of mayonnaise and mix the salad well.
When serving, decorate the finished salad with herbs (a sprig of dill). If desired, you can add more green onions to the Zodiac salad.
Zodiac salad turns out to be very colorful, bright, and most importantly very tasty. This salad will decorate any table. All the ingredients of the dish are perfectly combined with each other: cucumber brings juiciness and freshness, fried mushrooms - flavor, boiled chicken eggs and fillets give satiety, and canned corn - color and light sweetness.
