Zodiac Salad with Chicken and Mushrooms

An easy yet very original salad — a surprisingly interesting, delicious combination of everyday ingredients. It can brighten up any weeknight family dinner or impress guests at a holiday table. This salad has all my favorite ingredients, and I make it all the time.

  • Start the Zodiac salad with the chicken. Boil one chicken breast ahead in salted water; you can add spices and a bay leaf to the water if you like. Leave the cooked breast to cool completely right in its cooking water — that keeps the meat juicy. Once cooled, cut the chicken into cubes or shred it into strands. Wash the button mushrooms well under running water and let them drain. Cut each mushroom in half, then slice each half. Start frying the mushrooms in vegetable oil. At first they'll release liquid; once it cooks off, add the finely chopped onion and fry until golden. This little trick gets the mushrooms and onion properly fried and delicious — if you start with the onion, it just stews in the mushroom liquid instead of frying. Salt the mushrooms at the end of cooking and let them cool. Wash two small fresh cucumbers and dice them. Boil the eggs, peel them, and dice them small too. Open a can of corn and drain it. In a deep bowl, combine all the prepared ingredients: two-thirds of the can of corn, the chicken, the cucumber, the fried mushrooms and onion, and the eggs. Salt and pepper to taste. Dress with a little mayonnaise and mix well. Garnish the finished salad with a sprig of dill, and add some green onion if you like. The Zodiac salad comes out colorful, bright, and most of all delicious — it'll dress up any table. Everything pairs perfectly: cucumber adds juiciness and freshness, fried mushrooms add aroma, eggs and chicken make it filling, and canned corn brings color and a touch of sweetness. Enjoy!
