Puff Pastry Kulebyaka with Rice and Egg
Thin puff pastry, a generous filling, incredible flavor! No exaggeration — this kulebyaka outdoes a lot of other pies! I'm a fan of the "less dough, more filling" school of baking. I recommend baking a kulebyaka to treat your family. (A kulebyaka is a traditional Russian filled loaf-style pie.)

- Make the filling for the pie: rinse the rice and boil it in lightly salted water until done; hard-boil the eggs, peel them, and grate them on the coarse holes; combine the rice and eggs in a bowl, season with salt and pepper, and mix; melt the butter in the microwave and pour it in. Mix the filling thoroughly. Roll the pastry out thin, about 3–4 mm thick, into a rectangle. Spread the filling down the center of the rectangle, fold one long side of the dough over it, then cut the other long side into strips about 2 cm apart and lay them across the top in a lattice. Crack the egg into a small bowl, beat it with a fork, and brush it over the kulebyaka, then sprinkle with sesame seeds. Place it on a parchment-lined baking sheet and bake in an oven preheated to 350°F (180°C) until golden brown. Enjoy!
