- I love thick, hearty bean soups, so here's another to add to your collection. Fasolada is a worthy representative of traditional Greek cuisine — a meatless soup of beans and vegetables. Thanks to all its good-for-you ingredients, it's perfect for fasting periods and for anyone eating healthy. Sort the white beans, discarding any bad ones, then rinse and cover with water. It's convenient to do this the evening before so you can start cooking in the morning. In the morning, drain the soaking water. Put the beans in a pot with the amount of water the recipe calls for and cover. Once it boils, lower the heat so the water doesn't boil away. Don't add salt yet — it can keep the beans from softening. After 30 minutes, add the carrot cut into large pieces. Cut the bell pepper into rough pieces and add it after the carrot (if your pepper is large, use half). Now make the tomato base: finely chop the onion and celery and sauté them in olive oil over low heat. Meanwhile, blanch the tomatoes in boiling water, peel them, and chop them small. When the onion turns golden, add the chopped tomatoes; they should release their juice and break down into a pulp as you stir. Add the tomato paste and mix well. After 5 minutes the base is ready — stir it into the pot. Mix everything thoroughly. Now you can salt the soup and season it with your favorite spices — dried aromatic herbs and ground black pepper work well. Taste the soup; if it needs more acidity, add a little vinegar (no more than a tablespoon). Serve fasolada hot or cold, garnished with fresh herbs. Fresh bread makes a great accompaniment. Fasolada is a hearty meal — despite having no meat, it's a real hit with the men in the family.
