Cooking method
Bring the water to a boil, add salt and load the fettuccine. Boil the pasta until ready, but do not digest, they should remain dense, and not boil. The finished pasta is discarded in a colander and washed with plenty of cold water so that they do not stick together.
Peel onion and garlic, wash and dry. Cut the onion into small cubes, chop the garlic or pass it through the press. In a frying pan with a thick bottom, melt the butter, but do not let it burn. Add onion and garlic to the pan, fry until golden brown. Do not make the fire too strong, stir constantly, the onion should not burn, it can spoil the whole taste of the finished dish.
When the vegetables are fried, remove from the heat, add cream cheese, milk and mix until completely homogeneous. Immediately pour in the sherry, grated parmesan cheese, season with salt and ground black pepper to taste. If desired, you can add other spices or herbs, but the taste of the dish turns out to be rich and full, so a variety of spices is not welcome.
Return the pan to the fire, stir and start to warm up over low heat. Very slowly bring to a boil, stir constantly so that nothing burns. When the sauce began to bubble, pay attention to its consistency. The liquid slowly evaporates, allowing the sauce to thicken sufficiently. When it reaches the desired density and consistency will be similar to sour cream, add fettuccine to the pan.
We turn off the fire immediately, the pasta is completely ready and they do not need extra cooking, even in sauce. Mix the pasta well with the sauce with a spatula so that it is covered with sauce on all sides. Spread the pasta on plates, decorate with finely chopped green onions and serve to the table. This dish is worthy not only of an ordinary family dinner, but is quite suitable for a sudden visit of guests.
