  • Bring the water to a boil, add salt, and add the fettuccine. Cook the pasta until just done — don't overcook it; it should stay firm and not turn mushy. Drain the cooked pasta in a colander and rinse it with plenty of cold water so it doesn't stick together. Peel, wash, and dry the onion and garlic. Dice the onion small and chop or press the garlic. In a heavy-bottomed skillet, melt the butter without letting it burn. Add the onion and garlic and sauté until golden. Keep the heat moderate and stir constantly — the onion shouldn't scorch, or it'll ruin the flavor of the whole dish. Once the vegetables are sautéed, take the pan off the heat, add the cream cheese and milk, and stir until completely smooth. Add the sherry and grated Parmesan right away, and season with salt and ground black pepper to taste. You can add other spices or herbs if you like, but the dish has a rich, full flavor on its own, so a lot of extra seasoning isn't really needed. Return the pan to the heat, stir, and warm it gently. Bring it very slowly to a boil, stirring constantly so nothing scorches. As the sauce starts to bubble, watch the consistency — the liquid slowly evaporates, letting the sauce thicken. When it reaches a sour-cream-like thickness, add the fettuccine and turn off the heat right away (the pasta is fully cooked and doesn't need any more cooking, even in the sauce). Toss the pasta well with the sauce, coating it on all sides. Plate the pasta, garnish with finely chopped green onion, and serve. This dish is worthy of more than an everyday family dinner — it's just right for a surprise visit from guests, too. Enjoy!
