Garlicky Canned Tomatoes for Winter (No Vinegar)
A great addition to any holiday spread! These vinegar-free tomatoes — made without any citric acid either — are a hit with anyone who doesn't care for marinades. They're quick and easy to make from everyday ingredients, and they come out sweet with a garlicky aroma — perfect alongside a strong drink.

Step 1:
How do you can tomatoes without vinegar for winter? Gather your ingredients. Choose firm, small tomatoes — cherry tomatoes are ideal. Wash and dry the tomatoes and parsley well. Wash the jars with hot water and baking soda and rinse well. Sterilize them over steam for 5 minutes, and boil the metal lids in water for 10 minutes.

Put sprigs of parsley and peeled, chopped garlic into the hot jars.

Pack the clean tomatoes into the hot jars, up to the shoulders.

Pour water into a pot and add the sugar.

Add coarse salt to the pot — avoid fine salt, since it's easy to oversalt with. Stir and bring to a boil, cooking a few minutes until the salt and sugar fully dissolve.

Pour the brine over the tomatoes to the very top and cover with the lids. Line the bottom of a large pot with a clean cloth and set the jars in it so they don't touch each other. Pour in hot water to cover the jars two-thirds of the way up. Set over medium heat, bring to a boil, and process the jars for 10 minutes once bubbles appear on the inner walls. Take the jars out and seal them tightly. Turn them upside down, wrap them up, and leave them until completely cool.
