  • Preheat the oven to 350°F (180°C) — you'll need it shortly. Rinse the chicken thoroughly, pat it dry with a paper towel, and trim off any membranes or bones. Put the chicken in a medium saucepan, cover with water, and cook until done. Drain off the broth, then shred the chicken into fibers and chop it finely. In a separate bowl, season the meat with salt and pepper. Rinse, dry, and trim the bell peppers, removing the cores and seeds. Set the peppers in a baking dish or on a sheet pan, brush their surfaces with olive oil, and roast in the preheated oven for 20-30 minutes (depending on their size). Let the roasted peppers cool, then cut them into thin strips. Finely chop the pitted olives (canned are fine). Peel the garlic, rinse it, and press it through a garlic press. Drain the brine from the feta and mash it with a fork until smooth, then stir in the minced garlic and mix well. Now assemble the dish: set a glass in the center of a large flat plate and arrange the ingredients in a ring around it. For the first layer, spread the chopped chicken and coat it lightly with mayonnaise. For the second layer, add the strips of roasted pepper and another light coat of mayonnaise. The third layer is the finely chopped olives, again topped with mayonnaise. The final layer is the feta-and-garlic mixture, finished with a little more mayonnaise to taste. Since a Christmas wreath is a holiday centerpiece, decorate it to match: rinse and dry the dill, then lay the sprigs over the whole surface in a circular pattern to mimic an evergreen wreath. Scatter the cranberries over the dill — you can swap in another red berry, such as red currants or pomegranate seeds. Red and green make the perfect holiday pairing. Lift the glass out of the center and the salad is ready to serve! It's sure to lift your guests' spirits and bring a festive feel to the table.
