Layered Chicken, Corn, Carrot, and Egg Salad
A bright, festive layered salad shaped into a ring for a celebration. This salad — eggs, chicken, corn, carrot, and cheese in layers — turns out juicy and tender once it's had a little time to soak. The top layer of corn and kiwi gives it a pleasant sweetness with a touch of tartness. It's a great choice for a holiday table.
Cooking method
-
Step 1:
How do you make this layered chicken, corn, carrot, egg, and cheese salad? Gather the ingredients.
-
Step 2:
Grate the hard-boiled eggs on the coarse side of a box grater.
-
Step 3:
Boil the chicken breast in salted water until done, then cool. Cut it into small cubes.
-
Step 4:
Peel the boiled carrots and grate them on the coarse side of a box grater.
-
Step 5:
Set an upside-down glass in the center of a round plate. Build the salad layers around the glass. First layer: the grated eggs, lightly salted.
-
Step 6:
Spread the egg layer with mayonnaise.
-
Step 7:
Then add the chicken.
-
Step 8:
Spread it with mayonnaise too.
-
Step 9:
The next layer is grated carrot. Salt it lightly.
-
Step 10:
Mayonnaise.
-
Step 11:
A layer of cheese grated on the coarse side of a box grater.
-
Step 12:
Pipe a lattice of mayonnaise over the cheese.
-
Step 13:
Sprinkle corn around the middle of the ring.
-
Step 14:
Peel the kiwi and cut it into thin half-moons.
-
Step 15:
Remove the glass. Decorate the salad ring with kiwi slices at the base and around the center. Chill the finished salad briefly, let it soak, and serve. Enjoy!
- You can swap the chicken for turkey or any other meat you like, but keep in mind the cooking time and calorie count will change.
- Homemade mayonnaise is worth the effort — tastier and more wholesome. You can also use sour cream or plain yogurt instead, on their own or mixed in to your taste, which lightens the dish.
