Squid, Shrimp, and Egg Salad

    How do you make squid, shrimp, and egg salad? Gather all the ingredients. In my experience, the salad tastes best with unpeeled squid, though you can use white peeled squid or even canned. Larger shrimp are better, but the small peeled "salad" shrimp work too. Use large eggs, ideally farm-fresh — or at least good Grade A large.

    Clean the squid. First peel off the thick dark-purple membrane to get it down to white (you can also buy squid already at this stage). Then remove the thin skin — both outside and inside. The easiest way is to do it under very hot water; try not to tear the skin and peel it off like a stocking.

    Bring water to a boil and add a little salt. Lower in the cleaned squid bodies and cook for no more than 2 minutes from that point. After that, the squid turns rubbery and tough. But there's a fix: if you do overcook it, keep simmering it for another 2 hours and it'll soften again. So — squid should be cooked either 2 minutes or 2 hours, nothing in between.

    Peel the shrimp. Since these are pre-cooked and frozen, you don't really need to cook them — just pour boiling or hot water over them, then drain after about 10 minutes.

    Drain the squid, cool it a little, and cut it into thin strips. You can also cut it however you like — into dice or rings.

    Hard-boil the eggs — usually about 8-10 minutes after the water boils. Cool, peel, and dice them.

    Combine everything and salt lightly — just a little, since the squid was cooked in salted water and the mayonnaise is already salty.

    Dress the salad with mayonnaise and mix well. I recommend homemade mayonnaise — at least you know what's in it. If you prefer, swap it for rich sour cream, or go the other way with a light plain yogurt like Greek.

    Serve the salad right away. Enjoy!

  • Homemade mayonnaise is worth the effort — tastier and more wholesome. You can also use sour cream or plain yogurt instead, on their own or mixed in to your taste, which lightens the dish.
  • How do you hard-boil eggs? To keep the shells from cracking, start them in cold water over low heat. Boil for 9 minutes after the water comes to a boil, then transfer to cold water to cool — the sudden temperature change makes them easier to peel.
