Salad with Smoked Sausage and Corn

A fun, colorful salad with smoked sausage. It comes together fast from simple ingredients, looks beautiful, and is satisfying enough to stand on its own. It's great for any gathering. I like to serve it in individual portions, shaped with a ring mold when plating.

    How do you make a salad with smoked sausage? Cut the sausage into thin strips. Use a good-quality sausage that you enjoy.

    Grate the cheese on the coarse side of a grater. Use real cheese, not a processed cheese product.

    Put the eggs in a saucepan of boiling salted water and cook for 10 minutes over medium heat until hard-boiled. Cool the cooked eggs in cold water, peel, and dice. (If you drop them straight into boiling water, they'll peel easily while still warm.) Use farm-fresh eggs if you can. To dice them quickly, I use an egg slicer with a square grid — it really speeds things up.

    Add the sausage, cheese, eggs, and corn to a deep bowl, then stir in the minced garlic and mayonnaise. Use a good brand of corn — sweet and juicy.

  • This appetizer salad works for both holidays and everyday meals. I make it often, whenever I'm craving something tasty — for parties and just for lunch. I love it not only for the flavor but because it costs next to nothing to put together. It's best eaten fresh, right away, so don't make too much at once. All the ingredients go together beautifully, and the corn gives it a bright, colorful look. There are plenty of variations on sausage-and-cheese salads — some add fresh cucumber, some fresh or Korean-style carrots, some napa cabbage, and so on.   • It's even better to make the mayonnaise yourself — tastier and healthier. You can also use sour cream or plain yogurt in place of the mayonnaise, either on their own or mixed with mayo in whatever ratio you like, to lighten up the dish.
