- Pour water into a pot and set it over the heat. Wash the apples and cut them into small slices. Add the frozen currants to the apples right away, stir, and let it come to a boil. There's no need to scald or rinse the berries first — if any little bits got in during freezing, they'll stay behind in the pulp when you strain. After 5–7 minutes, stir in the sugar. Once the compote comes to a boil, let it simmer gently for 10 minutes. Turn off the heat, cover, and let it stand. Strain the compote through cheesecloth and discard the solids. What you get is a fragrant, delicious drink — a little greeting from a warm summer. While it's still hot, pour it into pre-sterilized jars, seal, and store until winter.
