Chicken Breast with a Side

A dish that always turns out juicy and delicious! Cooking chicken is always easy, simple, and tasty — and this recipe is no exception. What I love about it is that the marinade makes the meat really tender and juicy, and you can marinate it ahead of time.

  • Rinse the chicken breast in cold water and pat it dry with paper towels. For the marinade, mix the sour cream with the mustard, then add a little salt and your spices and stir. Add the whole chicken breast and turn it well in the marinade so it's coated on all sides. Cover the bowl with a lid or plastic wrap and let the meat marinate for 1–2 hours. To cook, heat a skillet until hot and add a little vegetable oil. Lay the chicken pieces in whole and sear over high heat until golden, 2–3 minutes per side, then flip and sear the other side. Separately, peel and finely chop the onion. Once the meat is well seared on both sides, add the chopped onion and cook together for a couple of minutes. Then lower the heat, pour in a little hot water, cover, and braise the chicken for 10–15 minutes — turning it partway through so it cooks evenly. As it braises, the onion softens and breaks down a bit, giving the sauce some body. For the side dish, bring water to a boil in a pot, salt it lightly, and add the spaghetti. Stir so it doesn't stick together. Cook until tender, about 10–15 minutes, then drain in a colander. Plate some spaghetti with the chicken breast alongside, and spoon over the sauce from cooking the chicken. If you like, sprinkle the finished dish with fresh herbs at serving. A fresh vegetable salad makes a nice addition, too. Enjoy!
