Fruit Tartlets

A bright, festive treat! Spoil yourself and your family! Fruit tartlets look gorgeous on a holiday table, but you can make them on an ordinary day too, for a little color and cheer. They're lovely in summer with seasonal fruits and berries, and in winter, when you're longing for sunshine and warmth.

    1. First, make the tartlet dough: sift the flour; cut the butter into pieces and add it to the flour; quickly rub the flour and butter together into crumbs; add the cold water and mix (if the dough is too dry, add another tablespoon of water); wrap the dough in plastic and chill it for half an hour. 2. Now make the filling: warm the milk in a saucepan; whisk the yolks with the sugar, then add the flour and whisk again; pour the warm milk into this mixture, add the vanilla extract, and stir; return the mixture to the saucepan and cook over low heat, stirring constantly, until thick; let the cream cool while you cut the fruit into pieces. 3. Make the tartlet shells: preheat the oven to 350°F (180°C); press the dough into cupcake molds, smooth it out, line it with parchment, and set a weight in the center (for example, small jars filled with dried beans); bake like this for 12 minutes; remove the paper and weights and bake another 12 minutes (until golden); turn the tartlets out of the molds and cool them on a rack. 4. For the final step: fill the tartlets with the cream and smooth it out, then press pieces of fruit into the cream. Enjoy!
