Cucumbers in Adjika for Winter
A must-have winter preserve—and a delicious one! These cucumbers in adjika are well worth putting up for winter: a real asset to your cold-weather menu. The zesty relish goes with any side, whether potatoes or a grain. Wear rubber gloves when handling the hot pepper, or you risk a burn. The bell peppers should be fleshy, juicy, and red. Small or oddly shaped cucumbers work fine here, but use only ripe, unblemished tomatoes.

- Wash the cucumbers under running water and cut them into rounds, trimming off and discarding the ends. 2. Wash the bell peppers, then remove the stems, seedy cores, and ribs. Rinse them again and cut them lengthwise into thin strips. 3. Wash the tomatoes, cut out the stem ends, and cut each into several pieces. 4. Scald the meat grinder attachment with boiling water, then run the tomatoes and peppers through it. 5. Pour the resulting mixture into a heavy-bottomed pot and set it on the heat. When it boils, lower the heat and cover. Cook for 5 minutes. 6. Peel the garlic and press it through a garlic press into the boiling tomato mixture. 7. Wash the hot pepper under running water, chop it very finely, and add it after the garlic. 8. Now add the salt, sugar, and vegetable oil. Stir. Keep cooking, covered, for 10 minutes. 9. After that, add the prepared cucumbers to the tomato mixture and pour in the vinegar. 10. Cook another 12–15 minutes, then pack into pre-sterilized jars and seal them airtight. 11. Turn the jars upside down and wrap them in a blanket. Leave them like that until completely cool, about a day, then move them to permanent storage. You can even keep them at room temperature in a city apartment, as long as it's dark—a pantry is perfect.
