Korean-Style Marinated Cabbage with Saffron

  • Wash the green cabbage well, dry it with a clean towel, and cut it into large squares about 1.5 inches on a side. Put the cabbage squares in a large pot, then cover them with boiling water and let them stand for 15–20 minutes. Meanwhile, peel the onion and chop it very finely. Set a skillet with vegetable oil over the heat and warm it up. Add the diced onion and fry until golden, then take the skillet off the heat. Wash the carrots and grate them on a julienne (Korean) grater. Peel the garlic and mince it (press it or grate it on a fine grater). Set the carrots and garlic aside in separate bowls. Pour 1 liter of water into a medium pot and bring it to a boil. Meanwhile, drain the water off the cabbage and pack the cabbage squares into a three-liter jar, layering them with the julienned carrot. When the water boils, add the sugar, salt, spices—ground coriander and saffron—and the minced garlic. Pour in the vinegar and add the fried onion. Stir well and turn off the heat. Pour the hot marinade over the cabbage in the jar, cover it, and wait until it's completely cool. Then refrigerate (or cellar) the cabbage for 24 hours. After that it's ready to serve. It keeps in the fridge for a week or two, though it usually disappears faster. Enjoy!
