Step 1:
How to cook compote from plums for the winter? Prepare all the necessary products. Suitable plum varieties Hungarian or just prunes. Such a plum holds its shape perfectly and its pulp is perfectly separated from the seeds. My sugar is ordinary white, but coconut sugar or cane sugar is also quite suitable - these types of sugar will give the finished compote, respectively, a coconut and caramel taste and aroma.
Step 2:
Wash the plums, remove the leaves and twigs if necessary. Cut the plums into halves and remove the seeds.
Step 3:
Sterilize the jars in any convenient way. I just put cans with a small amount of water in the microwave for 5-7 minutes. But you can also sterilize them in the oven at 100 degrees for about 30 minutes, or just hold them over steam or pour boiling water. It is enough to boil the lids for 10 minutes.
Step 4:
Fill the jar with about a third of the plum halves.
Step 5:
Boil water in a separate bowl and pour it into a jar.
Step 6:
Cover with lids and leave for 10 minutes. Drain the water back and put it on the fire.
Step 7:
Add sugar and bring the syrup to a boil. Lovers of spicy compotes can also add some flavors to the syrup: vanilla sugar, cinnamon, cloves - a pinch of these spices will be quite enough!
Step 8:
Pour the boiling syrup into the jar and close the lid tightly or roll it up.
Step 9:
Turn over the jar of compote and leave it to cool completely.

Remember that spices such as salt, sugar, as well as vinegar and its substitutes are used in recipes for winter preparations not only for taste, but primarily as preservatives. Therefore, in no case should you reduce the concentration of salt and sugar, and also replace vinegar (essence) with a weaker concentration than indicated in the recipe, otherwise vinegar (salt / sugar) will not show their preservative properties and the workpiece will be spoiled.
For cooking, it is better to use filtered or bottled water that is neutral to taste. If you use tap water, keep in mind that it can give the dish an unpleasant characteristic taste.
