Snowflake Salad with Chicken

A delicious layered salad with a wintry theme. The name alone brings winter to mind, which makes it especially fitting for the December holidays and other winter celebrations. But it's a treat you can make any day of the year for family or friends.

Cooking method

    Gather the ingredients for the Snowflake salad with chicken.

    You can use any mushrooms. I used fresh button mushrooms. Wash them first, pat them dry, and chop them finely. If your mushrooms are frozen, thaw them at room temperature or in the fridge.

    Peel, wash, and finely chop the onion.

    Pour vegetable oil into a skillet and add the mushrooms and onion. Fry over medium heat until done, stirring now and then, salting the mushrooms partway through. Let them cool.

    Boil the chicken breast in salted water until cooked through. Lift it out of the broth, let it cool, and cut it into small cubes.

    Hard-boil the eggs and cover them with cold water to cool. Peel them and separate the whites from the yolks.

    Boil the carrot, peel it, and grate it on the coarse side of a grater.

    Chop the walnuts, not too finely, however you like — a blender, a knife, or just crushed.

    Grate the yolks on the fine side of a grater.

    The whites are the very top layer. I tinted half of them with tea so the white snowflake of mayonnaise would stand out clearly. To do this, steep 1.5 teaspoons of loose tea in 1 cup of water, then soak the whites in it for 15 minutes; remove and pat them dry. This is optional, of course — you don't have to tint the whites.

    Build the salad on a flat plate. First layer: chicken. Spread with mayonnaise.

    Then the grated carrot, lightly salted if you like.

    Spread with mayonnaise.

    A layer of fried mushrooms. No mayonnaise needed here.

    Then add the grated yolks.

    The next layer is the chopped walnuts.

    Grate the cheese on the fine side of a grater and spread it on top. Spread with mayonnaise.

    The top is the tinted whites, grated finely. Spread the sides of the salad with mayonnaise and coat them with the remaining grated whites.

    Pipe a snowflake of mayonnaise on top. Refrigerate the salad for 2 hours so it soaks together. Enjoy!

  • Other parts of the chicken (thigh, drumstick) work in place of breast. You can also fry the chicken in pieces or roast it. Use any cheese you like: processed, brined, or semi-hard. If you use wild mushrooms, boil them first, then fry until done. Everyone loved this salad right away — partly because they love mushrooms in any form.
