  • The name "Mother-in-Law's Tongue" has long stuck to fiery, spicy dishes—and since they keep landing on everyone's list of favorites, here's one more to add to it. The best-known versions are usually the cold eggplant appetizer and the canned zucchini relish, but this eggplant relish for the winter deserves just as much attention. So if you haven't met it yet, allow me to introduce you. First, make the sauce: run the tomatoes and both kinds of pepper through a meat grinder. Add the sugar, salt, and vinegar, and boil everything for 20–30 minutes. Meanwhile, slice the eggplant into "tongues"—planks about a quarter inch (half a centimeter) thick. Add them to the tomato-pepper mixture and boil for another 15–20 minutes, stirring now and then. Sterilize your jars while it cooks. Just before the end, stir in the garlic (crushed or pushed through a garlic press). Ladle the relish into the prepared jars and seal them. Turn the jars upside down and wrap them up to cool. And that's all there is to it.
