Five-Minute Blueberry Jam for Winter

    How do you make five-minute blueberry jam? Gather your ingredients—and there's a bare minimum of them: just blueberries and sugar. You won't need any water!

    Sort through the blueberries and pick out any leaves and bits of debris. Rinse the berries well in cold water, then tip them into a colander and let them sit a while so all the excess water drains off.

    Transfer the berries to a large bowl and cover them with the sugar. Give the bowl a gentle shake so the sugar settles evenly among the berries. Don't add all the sugar at once—if your berries are sweet, you may need less than the recipe calls for, and you can always add more later. Let the sugared berries stand for a few hours so they release their juice. To speed that up, run a spoon through them, lightly crushing some of the berries.

    Stir the berries and sugar together and transfer everything to the pot you'll cook the jam in.

    A non-reactive (enamel) pot works best. Avoid aluminum, so the metal doesn't react with the berry juice. Bring the berries to a boil, stirring until all the sugar dissolves. Taste, and add a little more sugar if you like. Boil the jam, stirring, for 5 minutes—that's enough time for the sugar to fully dissolve and the tender berries to soften.

    Prepare the jars for the jam: wash and rinse them well, then sterilize them however you like—in the microwave, in the oven, or over steam. For the lids, it's enough to scald them with boiling water and set them out to dry.

    Ladle the jam into the prepared sterilized jars and seal tightly with the lids. Turn the sealed jars upside down and check that they're airtight. Wrap them in a warm blanket and let them cool completely that way. Why the blanket? It lets the jam cool as slowly as possible, which helps it finish setting up.
