  • By cooking time, your plums should be pitted—if you haven't done that yet, take care of it now. Then toss them with 2 kg of sugar in a large pot and stir well. Set the pot over very low heat and keep an eye on the plums. Before long they'll start releasing their juice. Stir that juice as it cooks. Add the chopped walnuts and keep stirring. After about 8 to 10 minutes—maybe a little longer—the liquid will come to a boil. When it does, stir in the cocoa. Wait for it to return to a boil, keep stirring, and after 40 minutes add the butter. From that point, cook for 20 more minutes to finish. While it's still hot, pour the jam-like mixture into jars and seal them tightly with lids.
