Solyanka with Beef, Sausage, and Smoked Ribs

Step 1:
Gather everything you'll need to make this hearty mixed-meat solyanka.

Step 2:
Pour 3 liters of cold water into a pot and add 400 grams of bone-in beef.

Add a little onion and carrot to the pot, set it over high heat, and bring to a boil.

Step 4:
Roughly chop 2 onions — not too fine.

Step 5:
Pour a little vegetable oil into a skillet.

Step 6:
Add the chopped onion and sauté over medium heat until translucent.

Step 7:
Grate 1 medium carrot on the coarse side of a grater.

Step 8:
Add the grated carrot to the onion in the skillet.

Step 9:
Sauté the vegetables for 2 minutes, stirring.

Step 10:
Skim the foam off the boiling broth, lower the heat, and keep cooking the beef for about an hour and a half, until fully tender.

Step 11:
Add 2–3 tablespoons of tomato paste to the onion and carrot in the skillet.

Step 12:
Stir everything together well in the skillet.

Step 13:
Add 2 ladles of broth to the skillet, stir, lower the heat to its minimum, cover, and let the vegetables simmer.

Cut as much hunter's sausage (a smoked, semi-dry sausage) as you like into small pieces.

Put the sliced sausage into a skillet without any added oil.

Cut a little dry-cured sausage into strips and add it to the skillet, too.

Cut a little semi-smoked sausage into strips and add it to the skillet.

Cut some ham into strips and add it to the same skillet.

Step 19:
Take the sautéed onion-and-carrot mixture off the heat.

Step 20:
Set the skillet of sliced meats over medium heat and fry, stirring.

Step 21:
Cut the aromatic smoked ribs into pieces.

Step 22:
Add the cut smoked ribs to the pot of simmering broth.

Step 23:
Cut 400 grams of bologna sausage into strips.

Step 24:
Fry the smoked sausage and ham until appetizingly golden.

Step 25:
Add the sliced bologna sausage to the fried smoked meats in the skillet and mix together well.

Step 26:
Cut 2 medium pickles into small dice.

Step 27:
Cut the cooked beef into strips.

Step 28:
Return the sliced beef to the pot of broth.

Step 29:
Add the sautéed onion and carrot to the pot.

Step 30:
Add the fried sausage and ham to the pot, too.

Step 31:
Add the diced pickles to the pot and stir everything together well.

Step 32:
Add bay leaf to taste, cover, and bring to a boil, then lower the heat and cook the solyanka gently for another 10 minutes.

Slice 15 black olives into rings.

Add chopped parsley, dill, and basil to the pot, to taste.

Add the sliced olives to the pot 5 minutes before the solyanka is done.

Stir everything together and let the solyanka rest for half an hour. Ladle it into bowls and serve with a slice of lemon and a dollop of sour cream.
