My General Layered Chicken Salad
The general of festive layered salads! This salad is famous for good reason — it's hearty and delicious. I'd call it a man's salad, what with the chicken, potatoes, onion, and garlic... but the women never fall behind the men either: everyone loves the General. When I make layered salads in a bowl, I grate the ingredients fine so the salad soaks through better and faster. When I build it in a ring mold, I use a coarse grater — it looks prettier that way, but needs more time to set, and salads like that taste best the next day.

Step 1:
How is the General salad made? Gather the ingredients you'll need. Boil the eggs, potatoes, beets, and carrot ahead of time and let them cool. Before boiling, give the vegetables a good scrub, ideally with a brush. Peel the boiled vegetables.

Grate the beets on the coarse side of a box grater. If they're very juicy and almost "weep," squeeze out some of the liquid over a bowl. I'd recommend wearing rubber gloves for this so you don't stain your hands. Press the garlic into the beets, season with salt, and stir.

Cut the smoked chicken into small cubes. Besides smoked chicken, you can use boiled or fried chicken in this salad.

Grate the boiled eggs on the coarse side of the grater and season with salt.

Grate the cheese coarsely. Use any cheese you like — a semi-firm one works best here.

Grate the boiled carrot coarsely and season with salt.

Finely chop the onion. To keep your eyes from watering, dip the knife in cold water now and then.

Grate the boiled potatoes coarsely. Season well with salt and stir.

Start building the salad in layers on a wide serving dish. The first layer is the chicken. Brush it generously with mayonnaise to keep the meat moist.

The second layer is potato. Brush it with mayonnaise.

The third layer is onion. Brush it with mayonnaise too.

Step 12:
The next layer is carrot. Brush it with mayonnaise.

Step 13:
Scatter the grated cheese over the carrots and add a little mayonnaise. Then top with the grated egg and a touch more mayonnaise.

For the final layer, spread on the garlicky beets. Smooth the top of the salad with a spatula.

Brush the top with mayonnaise and chill the salad in the refrigerator for about an hour to set.

Before serving, decorate the General salad however you like. I simply cut little stars from boiled beets with cookie cutters, arranged them on top, and added some fresh herbs.

- Root vegetables like potatoes, beets, and carrots are best scrubbed clean with a brush or a stiff sponge under running water.
- Your cutting board won't pick up that lingering onion smell if you rub it with a piece of lemon before chopping.
- It's better to make your own mayonnaise — it'll be tastier and better for you. You'll find some great homemade mayonnaise recipes here. You can also use sour cream or plain yogurt as the dressing instead of mayonnaise, on their own or stirred together with mayonnaise in any ratio you like — that'll cut down on the calories.
- Like all layered salads, the General is a party dish. You can build it in a tall salad bowl or in a ring mold like I did. It looks especially striking shaped like a star ;) A general, after all :)
