- You only need five ingredients to make this beet spread: beets, apple, garlic, cream cheese, and salt. Boil the beets in their skins to preserve as much of their color, flavor, and nutrients as possible, or roast them in the oven (roasting is the healthier option). Cool them, peel, and mash—in a blender, or on the fine holes of a grater if you don't have one. Peel and core a fresh apple (a sweet-tart variety tastes best) and mash it into a purée as well. For this recipe, use young (spring) garlic: the cloves are small, and it's more fragrant and less harsh than winter garlic. Peel the cloves and put them through a garlic press. Combine the prepared beets, apple, and garlic in a bowl, add the cream cheese and salt, and mix thoroughly until smooth. Let the spread rest in the fridge for a bit—30 minutes is enough for the flavors to meld. Serve with freshly baked bread, wheat or rye; it's delicious either way. This zesty appetizer will likely catch your guests' eye first for its bright, juicy color—and then disappear from the table first for its taste. If you like, you can swap the cream cheese for hard or processed cheese or farmer cheese, each giving a new flavor.
