- You need just two ingredients to make this long-keeping, delicious homemade treat. We'll make the plum leather the classic way. Stem and pit the plums and cut them in half. Cook them in a pot for an hour—don't add any water; the plums cook in their own juices. Once they're done, press the plum pulp through the fine holes of a sieve. Return the resulting purée to the pot and cook it for two hours, stirring with a spoon. Half an hour before it's done, add the sugar and stir until it dissolves, distributing it evenly through the mixture. The finished jam isn't fruit leather yet—it needs to cool. Then pour it onto a baking sheet lined with oiled parchment, spreading it across the whole surface. Put it in a preheated oven and keep it there for 15 minutes at up to 175-195°F (80-90°C). The thinner you spread the layer, the faster the leather dries. You can also dry the jam in batches, one sheet at a time.
