Pearl Barley Porridge Cooked in Water with Butter

A fantastic dinner side dish for the whole family! Pearl barley cooked in water is a great match for meat or vegetable dishes. Both grown-ups and kids will dig right in. The one thing to keep in mind is to measure out just enough to eat fresh in one sitting, without saving leftovers—once it sits, pearl barley loses its flavor and turns a bit tough.

    1. The evening before, put the barley in a bowl, cover it with water, and leave it overnight.
    1. In the morning, drain the barley in a colander and rinse it under running water.
    1. Now transfer the barley to a pot, cover with water, add salt, and set it over the heat.
    1. Cook the porridge for 50 minutes, then cover with a lid, wrap in a towel, and let it steam for another half hour.
  • Stir butter into the finished porridge and serve.
