  • Boil the potatoes in their skins. Peel them and cut them into cubes. Peel the cucumbers and dice them too, along with the hard-boiled eggs. Add the diced beef to round it all out. Chop the herbs. Tip everything into one pot and stir with a spoon. Take a second pot and make the "broth" in it: combine the mayonnaise and water. Use just a little water relative to the mayonnaise—5 or 6 tablespoons will do. It should be boiled water that has cooled. Stir until the water and mayonnaise are fully combined, then pour it over the contents of the first pot. Finally, top off the whole pot with about 1.5 liters of water, add 3 tablespoons of vinegar, and season with salt. Savor your cool okroshka.
